“Grand Cru”
Truly the finest expression of American oak available, Canton’s “Grand Cru” barrel demonstrates how elegant and complex American oak from Indiana and Kentucky can be. 36 month air seasoning, extra fine grain hand-selection, and expert toasting are the keys to the “Grand Cru’s” unmatched quality. Ideal for extended aging of premium varietals, the “Grand Cru” barrel will enhance structure and lengthen the finish of your wines. Recent tastings have confirmed the “Grand Cru”’s affinity with Bordeaux varietals, Rhone style Syrah, and barrel fermented Chardonnay.
“Vintage”
Canton’s “Vintage” barrel offers an exquisite balance of rich American oak sweetness and bright spice. The tight grain oak used for this barrel has been air seasoned for a minimum of 24 months and toasted with care over open oak fires. The “Vintage” is currently being used in both white and red wine programs, but lately has been getting particularly rave reviews in Zinfandel and Syrah programs. Winemaker’s notes on the “Vintage” barrel include “creamy”, baked bread and cinnamon”, “good middle palate depth” and “sweet approach and rich round mouth feel.”
